Some simple holiday food..

Keeping it simple is my goal at this time of year. BBQs with salads and easy to make roasts and desserts. It is unusual to celebrate Christmas in a Buddhist nation, where the locals are not involved in spreading the Christmas spirit.
It is almost a relief and has its benefits. It decreases the holiday tension that might be experienced at home. Everyone fussing over food, last minute shopping and dealing with difficult family dynamics, is lost as we don’t have any extended family here. Christmas is mainly focused on the kids, healthy eating, relaxing and quite a few drinks..
Here are two of my favourite easy festive foods.

Pork roast and veggies - love that crackle!

Baked apples stuffed with dates, walnuts, soaked raisins and cinnamon. So easy to make. Stuff them and bake them for 20 minutes - scrumptious!
