Paleo Gnocchi

Ingredients

  • 500g cooked sweet potato
  • 100g cooked pumpkin
  • 1 egg white
  • salt and pepper
  • 1 heaped teaspoon rosemary
  • 2.5 cups arrowroot flour
  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1/2 coconut flour

Directions

Step 1
Put all ingredients in the thermomix and mix for 10 seconds on 7. I even left the skins on both sweet potato and pumpkin. Best if organic.
Step 2
Take the mixture out and place in a bowl and put it in the fridge for 2-3 hours.
Step 3
Spread some flour out on the kitchen table and roll the dough into snakes. Your kids might love this part. I used tapioca flour as it is the cheapest.
Step 4
Then cut the snakes into gnocchi sized bits. I used a fork to add little dents, but my wise Italian friend says it should be a thumb print...
Step 5
Boil some water and place the gnocchis in. When they are ready they will float to the top.
Step 6
I froze half for a rainy day. The other half I ate together with a Napolitana sauce. You can also fry them in butter and make them crispier. The kids like that better..
Just think of your most Paleo friendly pasta sauce you have been missing and throw them in. Have fun.
