Liver lovers

Liver lovers

  • 500gm minced beef (grass fed/organic whereby possible)
  • 200gm liver (pig or beef)
  • 1 large onion (diced)
  • 1 garlic clove (minced)
  • 2 tablespoons Witches seasoning
  • 1 tablespoon coconut aminos (Tamari is an Ok substitute if you are OK with Soy)
  • 125ml water
  • 1 teaspoon Mixed Italian herbs (Always check the ingredients on mixed herbs. They often include sugar and other nasties.)
  • 1 cup Chopped bacon (with fat)

Step 1
Chop Liver into small pieces or put into a food processor. I use a Thermomix on Level 5 for 3 seconds.
Step 2
Put the chopped liver in a bowl with the Witch Seasoning, garlic and Coconut Aminos and put in the fridge.
Step 3
Put onions and water in a deep pan and cook on a medium heat until the water disappears and you are left with a sticky onion mixture.
Step 4
Add the bacon and fry for a few minutes.
Step 5
Add the liver and the italian herbs and cook on medium heat until the liver is cooked through. About ten minutes. Then add the mince. Fry all the ingredients until cooked and your kitchen smells freakin' fantastic.
Step 6
Add Himalayan salt and black pepper as desired.
Step 7
Eat the mixture as it is or stuff it in capsicum and cook in the oven for 20 minutes on 180 degrees Celsius.
